This simple, crunchy relish is the perfect cool counterpoint to any meal, from Brochettes to Isombe. It highlights the true, clean taste of our locally-sourced Rwandan produce. Ready in less than 10 minutes!

Instructions
Prep the Onion: Thinly slice the red onion. Pro Tip: Rinse the sliced onion briefly in cold water before mixing to take away some of the harshness, enhancing the sweet flavor of our fresh produce.
Chop: Dice the tomatoes and avocado into medium-sized cubes. Roughly chop the fresh coriander.
Combine: In a medium bowl, gently mix the sliced onion, chopped tomatoes, and coriander. If you are using a chili, add it now.
Dress: In a separate small cup, whisk together the fresh lemon/lime juice, olive oil, salt, and pepper.
Toss: Pour the dressing over the vegetables and toss gently to coat everything.
Garnish: Add the cubed avocado last and give it one final, very gentle toss so the cubes remain intact.
Serve Fresh: Serve immediately as a refreshing side dish!
